I have done these but not raw. I have boiled the sweet potato and then sliced them and dehydrated them. It works for the chips and fries. Makes them more like chips. But if you want raw this probably wont work for you.

It would of been nice to see what you used to make the thin chip slices, I think the problem with the fries is the size of the cut, I am going to try them cutting them into thinner pieces, more like potato sticks.
I want to buy an Excalibur dehydrator so bad...just waiting for my wife to warm up to the idea...
