How hot should the pan be? Should they be cooked on slow heat, medium heat or high heat?

Really depends on if you have a gas or electric furnace and such. I've seen it helps me to start on high heat, then lower to medium-high and then finish off in medium heat after I put oil/butter in the end. For me as well, it tends to not be cooked very well if I do this on medium heat all throughout.
