Korean Fried Chicken Wings Sticky Soy version

This is my best version of Korean Fried Chicken so far. I used a basic Korean Frying mix with some curry powder. The simple sauce is soy sauce, Korean rice syrup, ginger juice and Korean pepper.

Wings get rinsed in cold water then salt, black pepper and garlic salt.

Mix 1 cup Korean Frying mix with ½ tablespoon curry powder (I used S&B), black pepper and garlic powder.

Coat wings with flour mixture.

For first frying fry @ 325 just until they start to change color.

Fry again @ 375 until golden brown.

During second frying make sauce. Heat 4 tablespoons of soy sauce, 4 tablespoons rice syrup, 1 ½ tablespoon ginger juice and 2 tablespoons chili pepper. When it starts to boil add wings and coat.

Sprinkle with sesame seeds.

  • What is the difference between Japanese and Indian curry powder? Can I substitute Indian curry power in this recipe? Thanks.

  • @BubbaJohnIsKing You could use indian, indian poweder is stronger but it would work.

  • @supercooled even the same ingredients taste different in other countries. that's because the products that are grown are slightly for each countries. Even Korean produce and Japanese produce and products can vary in taste. My mother knows the difference between the taste of Korean soy sauce and Japanese soy sauce. it is really "korean" ingredients. and btw, Asia consists of many different countries. The Korean spicy pepper cannot be found in many south east asian countries

  • Do you have a fetish for all things Korean? Most of those "Korean" ingredients are simply Asian. Other than that, it looks delicious.

  • @nunvikingsofthesea Ok now I get what you are asking. As with any sauce on a fried food, if they sit to long they will soak up sauce and get soggy. The goal is to finish cooking them coat them when they are hot and serve right then.
