200g fresh king prawns -- peeled, whole or halved and de-veined
15ml olive oil
20g cooked chorizo sausage -- diced small
200g vine ripened cherry tomatoes -- halved
2 cloves of garlic -- peeled and sliced thinly
10g fresh basil -- roughly chopped (at last minute)
30g spring onions -- sliced thinly
1 chilli -- de-seeded
60g chopped tinned tomatoes
salt and pepper
80g uncooked linguine (200g cooked)
First get all the peeling, chopping and measuring done and ready to go.
Now place a large pot of salted water on to boil. When boiling, add your linguine and cook until al dente.
While your pasta is cooking add half the oil to a sauté pan and place on the heat. When warm, add the garlic
and diced chorizo and fry gently for 1--2 minutes. You will start to see the oil turning red, this is the paprika
in the sausage. Add the chopped chilli and cherry tomatoes. Season with salt and pepper and gently cook
until the tomato slightly softens. After 30 seconds add
half of the basil and the chopped tomatoes, simmer for
30 seconds and remove from heat.
In a separate frying pan, heat and add the remaining oil.
Let the oil get really hot, then quickly add your prawns
and stir-fry for 1--2 minutes or until they turn pink. Mix
the prawns into the tomato sauce and add the spring
onions and remaining basil. Adjust seasoning to taste.
By now the pasta will be cooked, so drain, pour into
the prawn sauce and mix thoroughly.
Divide the pasta into 2 warm, deep bowls.
Once again! Amazing! Thank you! I'll be making this one to... I see you like seafood, any ideas with tuna steak?

@lilxtina1790 Tuna is a bit like fillet steak - so is great with salsa verde and hot potato salad or perhaps au poivre!
