@robybooy actually they SHOULD be golden. i didn't understand why they put those terribly pale pates in this video. a good pate a choux should be:
*perfectly dry
*golden
*crispy exterior and a very thin relatively soft interior

perfect recipe... but i'm doing constantly something wrong, the dough is inside too raw imho and smells or lets better say tastes so much like eggs. In the video the final product is so perfectly pale, ah mine are yellowish... any advice :) ??
