how do you know how much power you will need when building a PC?

Not that essay to answer to this.
Most power is used by CPU usually not more than the spec TDP usually in the range of 35W to 95W then there is the motherboard and a simple modern microATX can use something like 8W to 30W depending on the components used.
RAM usually in the range of 2W to 6W depending on number of modules, size and speed.
Then there is the HDD 3W to 10W or SSD 0.5W to 3W.
All this are just for for orientation there is no easy answerer you need to experiment.

Can you tell me what specific AC/DC transformer you're using? I'd rather get one that works "out of the box" than have to modify something.

They are generic AC/DC adapters I have them as a kit for sale on eBay but I can sell also separately.
They are 120W 20V 6A with acceptable quality. I have one running for about 7 months on my computer.
Also depending on your needs there are some 90W 20V 4.5A with the 4 pin connector search for DELL 2001FP they where used on some DELL monitors and are quite inexpensive on eBay.

Yes it will work with no problem other people used this PSU on similar setup.
Sandy bridge is quite efficient.

Hi, my current setup is:
- Intel i5 2500K (stock fan)
- Asus P8H67-I Deluxe motherboard
- Crucial M4 64gb SSD
- Seagate Momentus 7200rpm 500gb HD
- Sony Optiarc slimline DVD-burner
- Noctua R8 80 mm case fan
I have the equipment in an Antec ISK-300 150W case. I'm thinking of replacing the PSU to get rid of noise. The box is for my wife who mainly uses it for watching youtube, dvd, and internet. I was wondering if I can use this PSU for this application.
Thanks.
