  • Yeah that sounds great. I need to find some peach wood to throw in the smoker, right use I use alder wood for fish. I like to let my fish marinate for quite some time also, but in this particular recipe this is more of a glaze. Trout has such a thin fillet so the flavor goes right through it.

  • looks good. I go trout fishing 2 or more times a week and I smoke alot of it useing almost the same things you used but I let mine sit in the marinade for 2hrs thats how long fish take to soke up the flaver. then smoke over peach or apple wood,or both.

  • im gonna try that with some whiting, looks good!
