Because it's not like football where you run a play and stop. With hockey your on the ice with guys that are contantly hitting you for minutes at a time and your emotion gets the best of you.
That and because it's so easy to deliver a dirty check. Many times it's the team mates of a player that was on the wrong end of a dirty hit that do the fighting.
Also, players aren't as likely to hit a teams star player if he knows that he's gonna have to go toe-to-toe with a tough guy.
