Searing doesnt actually seal in the juices, its a myth. The only thing searing does is caramelize the outside for more flavor. It's called the Millard Reaction and it also occurs when baking bread (the crust). I like Adam Richman but he doesnt know shit.

@desorienter ..well red meat doesnt need to be overly cooked. only chicken and such needs to be cooked with no pink honestly. i think fully cooked beef tastes like a hockey puck..
