Ingredients:
4 cups of sliced squash (kadoo)
3 tablespoon oil
1/8 teaspoon asafetida (hing)
1 teaspoon cumin seed (jeera)
½ teaspoon fenugreek seeds (dana mathi)
1 tablespoon coriander powder (dhania)
1 tablespoon coarsely ground funnel seed (saunf)
½ teaspoon turmeric (haldi)
1 teaspoon chili powder (pisi mirch) adjust to taste
½ teaspoon paprika (dagi mirch) provides a nice color
1 teaspoon salt adjust to taste
4 whole red chili (sabut lal mirch)
1 tablespoon shredded ginger (adrak)
1 tablespoon lemon juice (nimbu ka ras)
1 tablespoons mango powder (amchoor)
4 tablespoons sugar (cheeni)
2 tablespoons chopped cilantro (hara dhania)

  • Being an Indian and having travelled around India, I must say there no single recipe to make anything. It all varies from family/cook to family/cook. This recipe and technique of cooking is so so good, have made it several times with different squashes. It diminishes the myth that every curry has to have garlic and onion. Looking forward to lot more such excellent recipes!!!

    I love this recipe and have made it many times in the last year. I like to substitute half of the squash for parboiled potatoes. It makes a nice texture. I have learned a lot from your videos and wish i could find a way to properly thank you. You are doing a very great service to my family... if they only knew. Thanks again, E.
