Of course the Jewish people wanted an apology from Mel Gibson. But they didn't call for jihad against him. They didn't ask allah to bomb him. They didn't threaten him with death. They asked for an apology.
Last time I was in USA, I saw a T-Shirt for sale that said "Jesus is coming. Look busy!" Obviously and insult to Christianity. But the Christians there understood that it was a joke, and they understood that they couldn't do anything about it.
Double standards? Hardly.
