What exaclty is 'Unstable Air'? I dont really see how air could be qualified as stable or unstable, as it's only air. Someone maybe explain?

According to the National Snow and Ice Data Center - Unstable Air is when static instability prevails in the air. This condition is determined by the vertical gradients of air temperature and humidity. Tim Samaras video called "The Unsolved Mysteries of Tornadoes" found on YouTube would explain it better.
