This time last year I was a Christian. Now I am an agnostic and nontheist (or atheist depending on how you define terms). What to do about Christmas? I haven't really thought much about it.

I suspect some sort of mantra may need to be started. Possible candidates include "We can argue this if you Reeeeally want to, or we can just enjoy the time off & together.", "Where's the Jesus in your holiday beliefs to begin with?", "Christmas isn't Christian..at all.", and my fav so far "Yeah, Happy Solstice." That's it, no explanation, just "Yeah, Happy Solstice." or Holidays. Make 'em think you're wiccan. :D
