    Sugar in the foods we eat cause blood sugar spikes, which causes the body to release insulin into the blood stream to knock blood sugar levels back down.

    Okay, he explained pretty well the chemical chain which leads to weight gain, and explained that the increase in insulin is what appears to be driving that gain. He explained that the insulin is produced in the body as a result of our diet, but what about the diet causes the body to produce insulin? I know I didn't take insulin pills this morning. Did I miss something?

    Your body doesn't start using fat for fuel until all glycogen is used up. As long as there is insulin being produced your body won't metabolize fat.

    Fat can be used for energy, but it's not a nutrient the body craves for. That's why it keeps you hungry. He's talking about a normal diet, which probably includes more than enough fat for the day - so the body is satisfied with that. But what about he other nutrients?

    She doesn't burn the 500 because she has hyperinsulinism. Insulin is the fat storage hormone. It doesn't let it go. So she in needs energy so she eats more .

    He said the extra insulin "comes from the global, industrial diet."

    If that's the case, then he's saying either a) the pancreas dysfunctions in overproducing insulin or b) these diets contain insulin (unlikely, insulin is costly).

    Hopefully he explains it in part 4.
