I used the same recipe a while ago with a friend and it turned out exactly like yours, rubbery and plain.

But we ate it in a bowl of ice cream with whip cream and it wasn't too bad, but def not great.

It turned out spongy because the egg was microwaved instead of baked. If you bake an egg and microwave an egg, those two eggs turn out to be SERIOUSLY different.
