Why Brine? A brine is used to impart moisture and flavor to the turkey, leaving the meat nice and juicy when cooked. My brine adds a little sweetness to the mix with the addition of the brown sugar and tanginess from the soy sauce.
Recipe:
3 Gal. warm water
4 cups brown sugar
3 cups salt
1 cup soy sauce
1 cup black pepper corns
5 ea bay leaves
4 cups ice
