He didn't even fall for her till later in the movie. The whole point of the movie was Death wanted to know what it was like to be amongst the living and even mentioned in the film that Bill Parish (Anthony Hopkins) fit the bill to be his guide. In exchange for more time added to Bill's life

Not sure how people don't understand the movie..it's plain and simple. Death comes to take a man who's time it is to die...in exchange (because even as he mentioned in the movie he sometimes would observe people living) he offered the man more time if he could show him around or be his "guide" amongst the living. He didn't know about the mans daughter and the coffee shop guy meeting...he just needed a body (also mentioned in the movie). He didn't want to screw the Bill Parish's daughter..
