http://www.karenrothnutrition.com Watermelon is a rich source of lycopene, containing more lycopene than raw tomato when measured cup for cup. Lycopene is a powerful antioxidant that protects against heart disease and stroke.

Watermelon is packed full of nutrients from Vitamin C & A which both support the immune system, to Minerals such as Magnesium and Potassium which both lower blood pressure. This is an ideal food for weight loss, since you get so many nutrients for so little calories. At about 50 calories in 1 cup

Did you know that watermelons do not ripen after they have been picked? So you must know how to choose a ripe one at the market. If the melon is ripe you see a yellow spot that proves that the melon was sitting on the ground a while. If the spot is more green or even white, then it was picked too early. They will most likely have little taste and will definitely be less nutritious.

Be sure to wash your watermelon with produce wash since it has a good chance of being very dirty since they grow while sitting on the ground sometimes exposing them to animal waste.

Watermelon is so delicious just as is. But if you feel like being creative for a picnic side dish, then toss watermelon chunks with fresh mint for a refreshing dessert. Toss in some almond slivers for added crunch and consider adding a little feta cheese to make it even more interesting.

  • @WhosAtroll Thanks! Can you believe that I suffered a broken jaw and mandible bone just 5 years earlier? I had to be wired shut and then go through wearing braces. Ugh!

  • Watermelon is in season now. It's terrible to see parents giving their little ones icecream instead!

  • @nocoercion I agree!

  • Thanks everyone for the additional tips!
