  • In this video I used ground turkey, and I actually prefer it. Spinach will work perfectly. I hope you enjoy it.

  • When i didn't have scarole I used spinach or swiss chard.

  • These work equally as well as escarole. Thanks for taking the time to comment!

  • I tried this... Thank you... EXCELLENT!

  • I'm glad you like the dish, and I really appreciate your coming back to tell me. Thank YOU!

  • Well thanks so much! That's a wonderful compliment!

  • You NEED to add beaten eggs near the end of cooking!!!

  • I just ate a bowl of chunky Italian wedding soup while watching this. Wow it was delicious. However, I had some small ball pasta in my soup. Is there no pasta in the traditional dish?

  • Thank you for the lesson. Very helpful. Will try it today. Could you please also tell me what else you are showing on your table as side dishes to eat?

  • This looks so good! I'll have to give it a try.

  • @TCFRita Great receipe, tried it several times and was very happy, thank-you for sharing it

  • Did you say you save the yolk because you will use it tomorrow?

  • Is there a reason why you didn't use the yolk?

  • I love your recipe, it is somewhat similar to my mother and Grandmothers way of making this soup except for the beans, my mother used to make shkutolle and beans to. Both are basic and simple soups. I just made a large pot for shkutolle and meat balls for Easter. Both sides of my family hail from the Abruzzi, my one Grandmother would make like scrambled eggs in a bowl, add parsley, Parmesan, salt and pepper, she would then slowly pour the egg mixture in to the hot soup while stiring.

  • did you put the yellow part of the egg in the mixture?

  • only time ive ever had this was on a whim out of a can, your tutorial inspired my 2 prepare this 4 my girlfriend. I'll be using spinach instead of the other vegetable , but thank you so much.....
