Homemade Spaghetti w/ Turkey Meatballs!

You'll need (approximate!):
Sauce:

1 tbsp. olive oil
1 c. water
1-2 cans diced tomatoes (depends on how much sauce you want!)
1/2 to 1 container of premade spaghetti sauce (or you can use extra diced tomatoes to increase volume instead)
1/2 onion, diced
1/2-1 red pepper, diced
1/2 green pepper, diced
5-10 black olives, chopped
1 pkg sliced mushrooms
3 cloves of garlic (or equivalent seasonings), diced
1-2 tsp parsley
1-2 tsp basil
1 tsp garlic powder or salt
1 tsp ground black pepper
red pepper flakes to taste (the more the spicier!)


Meatballs:

1lb ground turkey
1/4c. parmesan cheese
1/2 onion, diced
dash of parsley
dash of basil
salt
pepper
1/2c.-3/4c breadcrumbs or smooshed crackers
2 cloves of garlic, minced

Fresh parmesan for the final dish if you want!
Garlic bread if you like!

OK:

For the sauce:

Heat oil in sauce pan, add onion, red pepper, and green pepper. In another pan, heat another tbsp olive oil and add other half of onion--these will be for your meatballs. Cook for 3-5 minuites or until translucent. Remove onions for meatballs from pan and let cool. Continue cooking other vegetable mixture, add mushrooms, garlic and black olives. Cook for another 3-5 minutes. Add diced tomato, spaghetti sauce, and water. Simmer for 5-10 minutes, then add spices. Continue to simmer on low heat.

For meatballs:
Prehead oven to 425. Combine turkey, cooled onion, garlic, parmesan, and spices. Add breadcrumbs or crackers. Make into balls about 1 1/2 inches in diameter. Spray bottom of baking pan or casserole dish. Place meatballs in the dish and cook for 3-6 minutes or until tops of meatballs begin to brown. Turn and cook an additional 3-6 minutes.

Add meatballs to sauce and simmer an additional 10 minutes or so.

Serve over the pasta of your choice--we used angelhair, nom nom!!!

I made the sauce thick by not adding much water--it was mostly just vegetables and their natural juices :) I used for the sauce red pepper, green pepper, onion, mushrooms, spices, and canned tomato (chopped or cut.)
