I was taught it (in England) as:
Pat-a-cake pat-a-cake bakers man
Bake me a cake as fast as you can
Pat it and prick it and mark it with B
And put in the oven for baby and me.
I have learned that people in the USA as well as being "Patty-cake", they don't "prick" the cake, but "roll" it instead.
The motion while pricking it is to put your index finger in the palm of your hand, whereas rolling it requires both hands/arms to roll over each other.
Haddon sometimes does the pricking motion.
