DOF refers to the depth of what can be in focus. A "shallow" depth of field means only a small part of the image will be in focus. This is often used in video to draw attention to a particular part of the frame and can look nicer than having everything in focus.

Aperture, focal length and the distance between the subject and lens all affect your depth of field.
