Chinese Chicken Microwave Recipe

Method
1. Mix the marinade ingredients together. Pour the marinade over the chicken breasts and leave to marinate in the fridge for 2-3 hours.
2. Place a piece of bruised lemongrass on top of each chicken breast and add some grated lime.
3. Cook the chicken on Microwave LOW power for 15 mins.
4. To serve garnish with the spring onions

Cooking Time: 15 mins
Dish: 28cm (11") Oval Gratin Dish
Ingredients:
4 x Chicken breasts 600g (4lb 5oz), Boneless & skinless
Marinade:
10ml (2tsp) sesame oil
30ml (2tbsp) light soy sauce
15ml (1tbsp) white wine
1 garlic clove, crushed
5ml (1tsp) chilli flakes
5ml (1tsp) fresh root ginger, grated
Add:
2 pieces of lemongrass, halved and bruised
1 Lime
1 bunch of spring onions,sliced

  • if i'm using thighs with skin on instead of breast, how many minutes would you suggest?
