Greetings from Reno, where water boils at 95 degrees Celsius (203 F). 15-minute canning times here (and spaghetti that never turns out quite right.)

Dang. I'm a baaad jam girl. I use non-canning jars, I re-use the canning lids, I substitute apples for pectin (pectin costs money; I get apples for free) because apples contain so much pectin they help to solidify fruits that are low in it. But my preserves taste great--all my acquaintances who eat them say so! So I must be doing something right. ;)
