You won't wanna talk about gambling, but, really, the issue you have picked is not a Matrix "red or blue" situation, where we have one of two choices, there are many choices. Even with just Jesus, you have several demoniations right away. This is also assuming Jesus "is the one true God".

As an atheist I like to answer these kinds of questions. You complain about fallacy, but use it as an argument. Your god is one of hundreds of creator gods, so even if one of them does exist, you're still gambling that you've picked the right one.

Also, can you share any evidence for your god that cannot also be used to support another?

Crap I forgot to wear socks on my hands and to eat nothing but vinegar and Stephen Fry's socks liquefied in a blender because there MIGHT be a killer teapot-spaghetti monster hybrid that MIGHT burn me in hell forever if I don't. You might as well do this because however small the chance of this actually being right there's still a chance and if you are right and you did  do all tat stuff then eternal bliss if you were wrong and you did well, you lost nothing. I believe you can. There are many philosophical points that can be considered that render the possibility of God's existence negligable.

If your biology governs everything about you (both mental amd physical), the "soul" is functionless, whatever you chose to label it. Furthermore, if it is non-physical it can not interact with the physical, and can hence not be held accountable for anything you do.

In other words, the soul either does not exist, or is entirely worthless, so "gambling" it isn't a big deal at all.

There are evidences both ways, but there is an overwhelming amount against the existence of God (Judeo-Christian or Deistic). There are types of philosophy that deal with this.
