Removing the scent glands on a deer will only contaminate your knife. Don't even deal with leg glands! Cut the legs off at the joint above glands and skin em. The best way to good deer meat is good shot placement, keep hanging carcass cool below 38 and hang for a week and a half. Young deer butcher right away. Pan fry rarish, and can't be beat!!!
The only good deers I have have eaten are the real young ones. I have had deer jerky that tasted like I was licking an old billy goat. Get a young doe, gut her fast, make sure she bleeds out and soak the meat in salt and vinager for 24 hours like the women said. I can't stand gamey deer meat. I don't understand why anyone would want an old deer unless they want the antlers more then the meat.
If your deer is "REAL STRONG" It's not being handled properly in the field. If your old man is driving it around in the back of the truck for 2 days showing his buddies, this could be your problem. By the way, deer isn't supposed to taste "just like beef". IT'S DEER.

@d00rgunner58 Point being......gut it and skin it as soon as you kill it. There will never be a wild gamey taste to the meat. This is for the ones that like to put it on the hood and parade it around then wander why it taste funny.
If you gut and skin in the field or with in an hour of killing you do not have to do all that b/s and will never have wild taste. If it is cold enough let it bleed out for a day hanging. Gut shots sometimes there aint no getting around it but wash the meat asap. Wild taste comes from the blood and skin.
wild means sort of strong tasting unlike storebought meats such as beef stew meat--I've got a cousin who used to place deer meat in ice water in sink and then pour a can or two of beer into sink with meat...he claimed it took most of the gamey taste out...but since he was a dang alcoholic back then, I wonder if it was just another excuse to have beer consumed-ha!
I like my deer to taste like deer. Maybe there is somthing wrong with me:)

most folk don't know about the musk glands are at 2 they do not age a deer right are long enough.
