I performed my first low carb cooking demonstration and showed the world the wonders of the mock danish. Mock danishes were one of the new comfort foods that I learned how to cook and was used to kill cravings that threatened the diet early on. Some qualifications for Kent's comfort foods were it had to be both easy and quick to make, and it could not have a lot of ingredients to prep. Most of the recipes, I will be demonstrating have my seal of approval for taste and ease in preparation. :-)

Here is the Mock Danish recipe:
2 oz Cream Cheese, softened
1 egg
1.5 - 2 tsp Splenda (**count against artificial sweetener count for the day)
1/2 tsp Vanilla
1 TBS Ground Flax meal (optional)

Topping
1 TBS Butter
.5 tsp Splenda
Dash Cinnamon

(IF = Induction Friendly)

  • @IrishFig It should. I really like adding fresh fruit to it rather than the flavored cream cheeses.

  • I might try this tomorrow...I also like things for breakfast like Lox spread with cream cheese, topped with a sliver of red onion a few capers and wrapped in a lettuce leaf, who needs the bagel!

    Egg salad, egg and bacon salad with celery or pork rinds, cold dinner leftovers, radish "hash browns", sardines with pork rinds ( sounds weird, but I grew up eating sardines, smoked oysters, steak tartare, carpaccio)

  • I can't wait to try this! But I had a question, do you need any kind of special bowl to microwave the mixture in? I just have regular microwave safe soup bowls. Just wondering if that would work. Thanks!

  • @FionaWest No, any bowl works well, but I personally prefer a ceramic as opposed to a plastic bowl. Your soup bowls sound fine.

  • @bowulf Well said, bowulf! LOL ! How many of us have eaten oatmeal, and how lovely is that to look at?! I'm just glad it's easy to make and that we have someone kind and motivated to take the time and effort to show us how to do it.
