  • Once again, nice work. As with many benthic species the bone structure is quite delicate and I'm impressed with your use of a straight spine blade in filleting. Personally I use an eight inch breaker for such a job as this. Question; Do you have many comments on the silver-skin being present and fillet curl during cooking?
