Artichoke Homicide!!!
What is he thinking! I grew up in the artichoke capital of the world (Castroville, CA) and this guy would be imprisoned for removing the leaves. I cut the top 1" off the artichoke and the bottom stem, invert in a steamer and steam for 20-30 min until the heart is tender. Tear off the leaves and dip in sauce or melted butter and then pull between your teeth to remove the flesh; when finished remove the "hairy" center and eat the remaining heart.

I prepare with a few inner leaves intact, boil in water with vinegar + salt, then drain and fry off with olive oil and a few whole garlic cloves for a few minutes, the leaves can be a bit chewy but are delicious.

There is nothing wrong with artichokes that are a little brown and peel-y on the outside. This is common with the winter crop, and occurs when temperatures dip below 32 degrees in the fields. The "frost-kissed" artichokes are actually more intense in flavor than the unblemished ones, and in-the-know Californians certainly wouldn't turn their noses up at this cold-weather treat!

where i work when they are clean we put them in a vacum bag with some butter pepper and salt and seal them. the cook them very slowly in water thats 60 degrees than put the bag in ice water

No, No, NO! The leaves should also be cooked. Dip them in olive oil, butter or whatever, and pull the fleshy part between the teeth - delicious prelude to the orgasmic heart!
