On a high desert plain just 100 miles south of LIMA, a 50-hectare plantation was established in the late eighties by Jose Vico & Family and now presently employees over 30 families. The olive products are grown, harvested and processed with the extraordinary care that precludes the necessity of chemical intervention. For that matter this farm has NEVER used any chemicals or insecticides! The fertilizers are naturally grown throughout the plantation to create a rich bed of humus and a Permaculture environment has been created with the integration of Eucalyptus, Casuarina, Pomegranates and Citrus varieties maintaining the highest degree of bio-diversity. The olives used in all of our products have been hand harvested at the peak of maturity. They are cold washed and hand selected for size and most appropriate use. Our Olives are proudly Certified Organic.

Peruvian OLIVICO olives are available in light brines containing only the finest Lima sea salts. Only the finest large and jumbo olives are selected. Full ripe black olives are available in light brine, large and jumbo green olives are available in light brine, or seasoned with organically grown aromatic herbs like bay leaves and thyme.
Our Dried Black Olives "the one of a kind in the marketplace" are Olivico Olives allowed to completely mature on the tree and fall naturally. They are hand harvested and sun dried for 5 to 7 days. After this they are brought into a climate controlled facility were they continue dehydration at Cold temperatures to maintain superior quality. Finally they are flash-washed with cold steam vapors to lightly clean the exterior of the olive and packaged accordingly.

I had not realized so much work and effort goes into processing olives. Organic means to put love into it I guess. One question...can you name some brands of olives that are canned? Can I find them unsalted? What is cheaper canned or in the jar? what is healthier? green or black? thanks.
