In this episode our three contestants are each sent to profesional kitchens to learn to perfect a signature dish. Matt is taught to make a crispy chicken stuffed with an asian infused buttery sauce. Hardeep must learn a highly complex dish of eel, courgette and potato. Roger is taught the basics and given a chargrilled veal to produce. From the BBC.

I could tell you a few things about cooking eels. In the good old days my Dad had a eel wire, we caught eels and Mom cooked them. O boy were they good. Many times I went with my Dad to catch eels.We sure cleaned them different than shown on this video.Both my Parents are gone to the Happy Hunting Grounds I am not far from joining them I can still recall the good flavor of my Mom`s eels. .
