Wild Rice and Lentil Salad
Curried Wild Rice and Lentil Salad
½ cup wild rice, cooked
½ cup red or green lentils, cook till water is absorbed
2 stalks of celery, diced
2 green onions, diced
1 handful of cilantro
1 tsp curry powder or paste
Dash of cinnamon
Salt and pepper
1 tsp grape seed or olive oil
¼ cup raisins
½ avocado, diced
Juice of 1 lime
1 garlic clove, pressed
Cook rice and lentils according to package, mix in curry, cinnamon, and garlic let cool. Diced up all vegetable and add to rice and lentils. Mix lime and oil together, pour over everything. Season with salt and pepper.
