  • When you sharpen the bevel and get "two thin stripes" (about 7:00 in), is this because the bevel has been hollow-ground or is it a property of the blade itself (harder steel on the surface than in the middle)?

  • The blade is hollow ground which makes hand-held sharpening easier. The edge and the heel of the bevel set securely on the abrasive surface without the need for a honing guide. This results in the "two thin stripes" along the edge and the heel of the bevel. No need to hone the entire bevel.

    Our blades (and most others) are hardened throughout.
