A legacy of the Portuguese Empire, Macanese cuisine is a blend of East and West, and well worth seeking out for its richness and subtle flavours.

Contrary to popular belief, the term "fusion" was not an innovation introduced in the 1970s. It had been going on for centuries in the home kitchens of the then Portuguese enclave.

Now, as the city holds its 9th annual food festival, Macanese cuisine is considered to be one of the happier legacies of almost 600 years of Portuguese global presence - the final chapter of which concluded 10 years this weekend with the handover of Macau to China.

But all around are examples of international influence.

Today, Macau is a destination for the affluent gourmet and for the value conscious food and wine lover, and even the Portuguese and Macanese restaurants, thanks to the town's near overnight transformation into Asia's Las Vegas, are more expensive than they used to be.

It is still a great place to eat out though, and offers dining experiences that simply cannot be replicated anywhere else in the world.

Whatever else you bring when visiting Macau, be sure to remember an appetite.
