Berry Scones

dry ingredients:
3 cups flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup of berries, dried*
1/2 cup granulated sugar
1 tsp grated orange peel

wet ingredients:
1 single serving container of vanilla yogurt
1 large egg
1&1/2 stick butter, cut up
1 tsp vanilla
1 cup of berries, fresh*

*(If you do dried berries, you can bag them with the dry ingredients. Fresh berries go with wet ingredients.)

Put flour, baking powder, soda, sugar, orange peel, and salt into a large bowl. Stir to mix well. Add the stick of butter and cut in with a pastry blender or fork, till mixture looks like fine granules.

Mix in egg and yogurt with a fork. When it starts to bind, add the
berries, if you're working with fresh berries, and work with your hands until a soft dough forms.

Turn out onto lightly floured parchment paper and form into a ball. Flatten the ball out to a large disc and cut into 8 wedges (or whatever number you need), but leave them in place on the paper.

Place the paper, scones and all, into a 12 inch dutch oven. Bake for 1 hour with ~15 coals on top and ~8-10 on the bottom. Turn oven 90 degrees, then turn the lid 90 degrees every 15 minutes.

At the 45 minute mark, melt the half stick of butter and add the vanilla. Open up, and pour over your scones. Replace the lid, and let it go for another 10 minutes or so, then remove from coals. If you need to transfer the scones to a serving dish (it happens), lift the entire works out by the parchment.

  • Looks good thanks for posting....is there anything cast iron cookware can't do? The guest cook has a great personality by the way....

  • tons of tips here and I don't think Roy and Courtney had any idea I'd get some much out of this!!!

  • Recipe reads nice, loved watching and hearing the cooking. Picked up a couple of new things. Never thought to cut the circle into the triangles, great idea when there is a crowd and putting the melted butter later in the cooking was new for me also. Hope to see some more from you.
