You should start with a cold pan, youll get a better end product. It gives the fat more time to render out and form a nice crispy skin.

a real master,could tell when the duck is ready just by the smell ,a master cook can smell the blood in the meat as it is cooking

In the oven 4 to 6 min. will give you a medium rare duck breast. USDA recommends that it be cooked to an internal temperature of 165 degrees, which will take a longer period of time.

DUDE WHAT THE HELL, you should cook your duck to 135 or 140 max, not 155, you just murdered your perfectly good duck breast

USDA recommends cooking a duck breast to an internal temperature of 165 degrees. As a USDA inspected food manufacturer, we (Maple Leaf Farms) follow USDA guidelines, so if you cook it to 155 degrees and let it rest, the temperature will rise to 165 degrees and it will still be rosy on the inside.
