Could you also show how to do low GI gravy using a thickener like guar or xanthan gum or yakon flour?

That's AWESOME! I crave mashed potatoes but am supposed to be on a low GI diet. If you can come up with a baked potato alternative now that will be even more impressive lol

It's me again. I tried this recipe 2 days ago and it is bleedin gorgeous and it fills.

A standard serve of most gravies doesn't contain much carb - only around 3 g - so unlikely to have much effect on your blood sugar. However, I would be concerned about the saturated fat and sodium content. Great idea to do a clip on healthier gravy alternatives.....thanx
