The international recognition of the Catalan cuisine is the result of a creative effort and re(dis)covering the traditional values of our way of eating and projecting those to the world. Catalunya has therefore created Alícia, a gastronomic research centre that brings some important improvement to our society, by means of innovation through the application of science to the cuisine.
