Elizabeth falls in love with Jack, but then in order to save herself and the rest of the crew, she betrays him and leaves him for the Kraken. They are able to rescue Jack from Davy Jones locker, but Elizabeth is still never able to forget what she did to Jack and wants to tell him that she is sorry.
When the song says "December" or "that night" it refers to when Lizzie betrays and leaves Jack. These scenes/memories of her leaving him are very brightly edited in the video.
