Takes alot longer than 30 minutes for a 4-6lb rib roast to reach room temperature. My 6.37lb roast took 5.8 hours to reach 68*F. after removing it from the refridgerator.
Completely ass backwards. Preheat oven to 200 F. NEVER cook ANY from of protein in heat above 200 F or you will turn the protein strands into rubber bands. When the roast reaches 118 F remove from oven. This allows for 'carry over' heat. Let the roast rest for ten minutes then return it to a 500 F oven just until the roast gets a nice crispy covering (about ten minutes). Remove let stand for fifteen minutes tented with tin foil then carve.
