depends on the brush you are using :)
Few Layers are better for the Overview, cost less time.
And what have layers to do with the complexity of a drawing? More Layers don't make a better drawing.
And the tutorials you speak of, this is 'Tutorial-makers' experience, try to find your own way - if you can work with so much layers, that's fine.

good painting but still many things "out of tune". His neck is to thick, mouth and chin are okay, but than it get's wrong. Nose and eyes look like you took them from other paintings.
In my opinion you work with to much layers, of what I can see is that you have at least 10 layers. Try to keep the maximum by 3 to 4, you can always merge layers.
Also, you work to 'smudgy/blurry', that's the reason your painting looks a bit flat
but enough for now - keep doing it ;)

Thanks for the advice, but one question:
Why should I try to keep the maximum layers to 3 or 4? I can't see the advantage of fewer layers apart from reducing complexity / size of the file... most tutorials I have seen use upwards of 5 layers for things like drawing a single ear...
I've gotten a graphics tablet so should hopefully be less smudgy/blurry in the future :)!
