  • Aging Room ?room temperature & time to anging the meat?

  • @jagang32 Do you think this guy would put all of this money and time into this process, if he didn't know precisely what the fuck he was doing? It seems you don't know whats going on in the aging process. He says it all right here. Think slow, controlled decomposition. Makes bar none, the best steak you will ever have.

  • @jagang32 what state do you live in? Have you ever had a properly aged steak? Have you ever been to New York City?

  • Meat does not age in primal cuts, it rots! hence the smell of rotting meat! Beef can only be properly aged hung in sides, and for up to 21 days only, any inspector in the state I live in would red tag this entire room, and force the owner to tank all of this rotten meat!!!
