Ten year old Cate has a go at making Chocolate Mocha Dacquoise Terrine.

Recipe by Pamela Clark (AWW):

Serving size: Serves 10 or more

INGREDIENTS

4 egg whites
1 cup (220g) caster sugar
2 tablespoons cocoa powder
200g dark eating chocolate, chopped coarsely
¾ cup (180ml) cream
1 tablespoon instant coffee powder
2 tablespoons boiling water
100g unsalted butter
2¼ cups (360g) icing sugar mixture
2 teaspoons cocoa powder, extra
METHOD

Preheat oven to slow. Line each of three oven trays with baking paper; draw a 10cm x 25cm rectangle on each baking-paper-lined tray.

Beat egg whites in medium bowl with electric mixer until soft peaks form. Gradually add sugar, beating after each addition until sugar dissolves; fold in sifted cocoa.

Spread meringue mixture evenly over drawn rectangles; bake, uncovered, in slow oven about 45 minutes or until meringue is dry. Turn off oven; cool meringues in oven with door ajar.

Meanwhile, stir chocolate and cream in small saucepan over low heat until smooth, transfer to small bowl; refrigerate until firm. Beat chocolate mixture with electric mixer about 20 seconds or until just changed in colour.

Dissolve coffee powder with the boiling water in small bowl; cool 10 minutes. Beat butter in small bowl with electric mixer until pale in colour; gradually add sugar, beating until combined. Beat in coffee mixture to make mocha butter cream.

Place one meringue layer on serving plate; spread with half of the chocolate mixture, and half the butter cream. Top with another meringue layer; spread with remaining chocolate mixture and with remaining butter cream. Top with last meringue layer, cover, refrigerate 3 hours or overnight. To serve, dust with sifted extra cocoa powder.
