  • I (an inexperienced cook) attempted this.

    -I think I oversalted this by trying to match what she put in. I recommend you leave out the salt then put it in to taste at the end. It doesn't have to cook or anything.

    -Hot korma is a little odd. If you don't want it hot, don't put in the chili. I thought I'd try it hot but on second thought I like it mild.

    -While you're letting the chicken simmer (for 15 mins), watch that it doesn't burn. Mine burned a bit.

    -I overseasoned a bit... go light.

  • this 2 parter presentation is the best instruction I've ever received on making a korma. Maybe I'm ignorant but learning things like making sure to bruise the cardamom and only deglazing with hot water to protect the spices. Oh and cooking all the moisture out of the onions before adding more spices. For me it's all about getting those spices to sing the best performance of their life, and with this video I hope I am on my way.

    And now I've gotta get me some saffron.
