Blinchiki are a popular Soviet breakfast/lunch dish. They are very simple to make and require a small amount of ingredients.

If you are a poor student on a budget or a busy parent with little to no time to cook, then Blinchiki are for you! :3

For this recipe you'll need:
1 Tbsp of unsalted butter (not to be mixed with the other ingredients)
Cooking Oil
2 Eggs
1 Tbsp of Sugar
1/2 tsp of Salt
1 Cup of Flour
2 1/2 Cups of Milk

Preparation:
Combine all the ingredients (except for the butter) in a mixing bowl and whisk or blend until the batter is smooth with no clumps. The consistency of the batter should be similar to heavy cream.

In a separate small bowl melt the butter in the microwave for approximately 10 seconds.

Turn stove on to medium high heat and butter your frying pan.
Ladle a thin layer of batter on to your frying pan and swirl it to create a round circle.

Let fry for at least 2 minutes or till the top of the Blinchik looks dry and the outside corners are crispy. Flip the Blin and let cook for another 1-3 minutes.

Transfer the Blin from the frying pan to a plate and butter the edges.

It's ready to eat!!

You can eat Blinchiki on their own or you may choose to stuff them with fruits, sugar and sour cream or maybe some meat and potatoes. Explore your taste buds!

  • Are you kidding me? My wife lives on sausage and potatoes. she's Belorussian though... How bad is it? I make spaghetti sauce, she pours it on potatoes, NOT pasta... She will cook other things but mostly, she lives on potatoes and meat. CRAZY (sumashershee) :-D She does cook good blini though!!! NEXT, teach us pierogi or what the Czecs call Kolachis.... :-D
