ok, wtf is with the text on the left side of the screen that pops up? He presses something and his guy changes completely! That's not normally in the game! Or is it?

That's the developer's cheat menu. They need that to demo specific features in the game when needed.

That would be "Sam", who was the guy helping Peter with demo-ing the game. Peter took over the controller at that point to rename the wife of the hero as Sam, as a joke. :P That's what we were all laughing about!
