An orange helmet, some departments use orange shields, means that the firefighter wearing it is either a Jr. member (under 18) or a probationary member (for many departments the first 6 months as a member). It just makes it easier on the fireground for the Chief to pick out the rank of a firefighter by quickly scanning the helmet colors just like you can signify line officers (yellow/red) and chiefs (white) by different color helmets.
