I do love seitan, cause it is a great sub for meat, but when I learned how to make seitan, I have learned that when you mix the dough, don't over mix, and let it set for at least 20 minutes before cutting up. Though your recipe looks good, I might try your way and see what the product looks like. Thanks ...

Hey love! Ignore those people- seems some people get their kicks out of coming on the Internet and using a fake name to put others down. You've done a great job- I've been looking all morning to find a recipe that doesn't require washing. Love it! :)

@psychedSlim Starches & Sugars do not promote diabetes, it will most likely go away shortly after people stop eating ALL meat, fish, fowl, eggs, and cheese etc. I know mine did. Much research is showing similar results with many other people. Food industry is trying to suppress results. Whole foods like wheat are necessary. They supply slow-burn complex carbohydrates which our cells use as their primary fuel source. Whole vegetarian foods & No animal products promotes easy weight loss. ~8-))

Gluten flour means that the flour has more gluten in it than regular flour. It still has a bunch of starch in it. Eating too much starchy food should be avoided, as sugary carbs in excess cause health problems including obesity and diabetes (not fun). Washing the gluten flour removes most of the starch and makes it rubbery (that's gluten). When cooked right, it feels / can be made taste more like meat rather than pastry and not hard at eat at all. Fried some on the pan yestarday. Delicious!

I'm not following your videos. You seem to have missed a few steps to get to the seitan steak. If you don't wash the dough, i.e. remove the starch, you don't have high protein wheat gluten and therefore; you don't have seitan but seasoned dough.
How did the unwashed seasoned dough in the broth become seitan of high protein gluten steak?

The flour has not starch in it. Gluten Flour (pls google I tried to post a link but youtube won't post my comment reply if I put a link on here)
If I washed the dough it would be highly rubbery and hard to eat.

Im also new to all this film making. I do how ever I do think I have some good recipes to share. I am by no means a professional but I am learning as I go along.
