"Big Joe" Giovanni La Fiura is a smiling man. Together with his wife and his children, he runs a little restaurant: I Sapori Del Mare in Palermo. What makes this man special is his love for life. He is a great chef and an even better host. When you come upon his little 25 seats eatery, you will immediately realize how passionate he is about his chosen profession. There is no menu , because he does not believes in one. He stops everymorning at Porticello, a small fishing village near his home in Bagheria a few miles outside Palermo, to see what fresh fish is available. Maybe he shares a cup of coffee with his favorite fishmongers, then he heads back to Bagheria, where a small community of retirees , present for sale the bounty of their plot of land from the community gardens. This garden is a couple of acres subdivided in many small plots farmed with love and passion by an army of older ladies and gentleman whio care for their crop with love and attention. When he gets back to his restaurant , together with his lovely wife, they decide what to make for the lunch and then for dinner. You have already seen a video of his daughter Susanna. it looks great, but I'm wondering why the whole fish was not scaled so you can enjoy crispy skin.
