Yeah, we sure can decide what we like or not, with someone benefitting or not.
I agree with your thought that original composer knows most how to do the songs that originates from within himself, others can just try make some copies or add something to the background, effects or whatever. It's not that these songs are any "greater" or different than the original ones Mr. Uematsu made, in my opinion, they have been just "fattened" ;)
Uematsu sure is amazing, truly a natural talent.

@asceteria Not all the songs on CC were orchestrated you know, in fact most of them are just midi's composed by Takeharu Ishimoto just like how the songs in FF7 were midis composed by Nobuo Uematsu the only difference being that since he thought of them he knew exactly in which direction to take the songs as a result leaving us with more heart in each of his songs....but I will agree we all have different tastes which is WHY there is a like and dislike bar and why i happen to dislike

@kalbremex16 Just a matter of taste. I could also start to say something like "I just can't be more amused with fools who stay with the old concepts regarding music, when songs of crisis core, compared to original FF7, are instead played with real instruments."
